The Inter-American Institute for Cooperation on Agriculture (IICA) published a guide to the interpretation of the Central American Technical Regulation RTCA 67.04.65:12 Use of Dairy Terms. 


This seeks to help the companies interested in selling their dairy products within the Central American region in the implementation of the harmonised regulation RTCA 67.04.65:12, and was completed with the collaboration of both, the official and private sector from every Member State of the Central American Economic Integration System (SIECA). 


In addition to the corresponding explanation of every item from the regulation, it addresses examples on how to label dairy commodities for industrial purposes and those directed for final consumers, showing also mistakes on this matter. 


Importantly, this guide clarifies on the use of the dairy terms in plant-based products. For example, traditional products such as peanut butter and coconut milk would be allowed to use them, but not almond, rice, oat or other vegetal ?milk? or other new products pretending to be or replace the milk or products thereof.
