On 27 September, the Peruvian government published Law N°. 31881, "Law Promoting the Provision of Information on Gluten-Free Foods".


According to this law:

  1. Foods labelled as "gluten-free" or "gluten-free" must comply with conditions to be established via regulation, in order to qualify as such.
  2. Manufacturers of "gluten-free" or "gluten-free" foods must have a programme of good manufacturing practices, established by the General Directorate of Environmental Health and Food Safety (DIGESA). 
  3. Foods that do not contain gluten may bear the symbol of a barred ear of corn inside a circle, in accordance with the characteristics established by the regulations.
  4. The regulations must be published within 60 calendar days of the Law coming into force (28 September 2023).
  5. From the publication of the Law, suppliers, distributors or traders, as well as producers or manufacturers, importers or suppliers, and food companies must comply with the provisions of the Law within 180 calendar days.


Now, it remains to wait for the approach of the authorities in charge of drafting the regulation, as well as the adoption of a maximum for gluten considering that Codex Alimentarius, one of the main reference on the matter, establishes a threshold of 20 ppm.
